The ancestral method is a method of elaboration of wines made effervescent.

The ancestral method consists in bottling the wine while the fermentation is not finished.

It is a very old method which contributed to the reputation of the wines of Gaillac and this since the XXth century. The natural elaboration of the ancestral method or Gaillacoise method is simple. It does not require the addition of sugar. Indeed, the process of creating the foam is done by the sugar of the grape. This one ensures the fermentation and the setting of foam and its residual sugar.
